Sirloin is cut from the lower portion of the ribs, the subprimal posterior to the short loin where the T-bone, porterhouse, and club steaks are cut.
Legend has it that sirloin is so called because it was knighted 'Sir Loin' by Henry VIII.
The sirloin steak is a succulent primal cut, so is tender, juicy and an ideal fit for beginners. The sirloin might be a lean cut of steak without as much marbling compared to the ribeye, but it’s anything but dry.
|Suggested Cooking Instructions||Ensure the sirloin steak is room temperature before cooking.
For a 2cm thick sirloin, each steak will take 3 mins in total for rare, 4-5 mins in total for medium and 7-8 mins for well done.
For a medium rare steak, ensure a core temperature of 50°C is reached before serving.
Leave the steaks in a warm place for half the cooking time before serving.
We recommend use of a meat thermometer for best results.
