A juicy steak for frying with a great taste.
Pavé means brick or paving stone in French, and these Pavé Steaks certainly live up to their reputation of a substantial, thick cut boasting dense texture and rich flavours. These steaks are also particularly lean, and juicy.
Substantially different from the Picanha and Rump Steak, the Rump Pave is cut from the lower muscle at the heart of the rump, to promise a very lean individual steak with no external fat. This is contrary to British (and Latin American) traditions of steak cutting, with the Rump Pave being more European in style and origin, though no less in prime quality.
|Suggested Cooking Instructions||Ensure your steak is room temperature and then season and sear the steak on both sides to create a dark crust. Reduce from a high heat to a medium heat and cook either side of the steak for 3 to 4 minutues.
For a medium rare steak, ensure a core temperature of 52° before resting.
Leave steak to rest in a warm place for half the cooking time before serving.
We recommend use of a meat thermometer for the best results.
