It is a prized cut of meat that holds ample amounts of flavour and is tender and juicy. Picanha is from the back side of the animal above the butt where it sits on a fat cap.
|Suggested Cooking Instructions||Bring Bavette to room temperature and then sear on both sides at a high heat to create a rich, dark crust.
Now, drop the steak to a medium heat and cook each side for 3 to 4 minutes.
For a medium rare steak, ensure a core temperature of over 52°c.
We would encourage use of a meat thermometer for the best results.
