Sirloin is cut from the lower portion of the ribs, the subprimal posterior to the short loin where the T-bone, porterhouse, and club steaks are cut.
Legend has it that sirloin is so called because it was knighted 'Sir Loin' by Henry VIII.
The sirloin steak is a succulent primal cut, so is tender, juicy and an ideal fit for beginners. The sirloin might be a lean cut of steak without as much marbling compared to the ribeye, but itÆs anything but dry.
