Tender broccoli and cauliflower florets are paired with a rich, creamy gratin-style sauce. The sauce combines cream and milk ingredients to create a smooth, indulgent texture, with onion and savoury flavourings adding depth and balancing the natural sweetness of the vegetables.
The combination works because broccoli brings a fresh, slightly earthy flavour while cauliflower has a softer, more delicate character that carries the creamy sauce beautifully. Once baked, the vegetables become tender and the sauce turns hot and luxurious, creating the kind of traditional side that works particularly well with roast-style chicken, Scotch Beef and pork dishes.
