| Our take on a French classic, hand prepared in our Muirhead shop using 100% Scotch Beef featherblade. Featherblade is exactly the type of cut we want in a dish like this. Taken from the shoulder, it has excellent natural flavour and benefits from slower cooking. Rather than using a generic diced steak, we specifically select featherblade because its combination of flavour and texture makes it ideally suited to rich, comforting dishes such as Bourguignon. The Scotch Beef is combined with a rich Burgundy-style sauce, creating a deeply savoury dish with subtle onion, herbs and rosemary complementing the beef. As it cooks, the featherblade becomes beautifully tender while releasing its rich beef flavour into the sauce. The result is the kind of hearty, satisfying dish that feels as though it has taken hours to prepare at home. Flavour profile: Deep, rich and savoury with full-bodied Scotch Beef flavour, subtle herbs, onion and a warming Burgundy-style sauce.
