Porterhouse steaks are cut from the rear end of the short loin and thus include more tenderloin steak, along with (on the other side of the bone) a large strip steak. Therefore, this steak includes a “”T””-shaped lumbar vertebra with sections of abdominal internal oblique muscle on each side.
Thicker than most steaks, the Porterhouse is an American favourite, boasting both the fillet and the sirloin on its distinctive bone. This means some of the best flavour the beast has to offer in one enormous steak that’s enough to feed two adults comfortably.
