| Rich, sticky and packed with flavour, our Slow Braised Oriental Pork Coppa is hand prepared in our Muirhead shop using carefully selected pork coppa and an aromatic Oriental-inspired sauce. We use pork coppa because it is particularly well suited to this style of dish. Cut from the collar and upper shoulder area, coppa has more natural marbling than very lean pork cuts. That marbling gives the meat excellent flavour and helps it remain succulent and tender during slower cooking, while its robust pork character stands up beautifully to a rich, sticky sauce. The pork makes up 77% of the dish and is paired with a savoury-sweet sauce built around soy, tomato, onion and bell pepper. Coriander, paprika, turmeric, ginger, fenugreek, chilli, mace, celery seed, cumin and caraway add layers of aromatic warmth, while soy brings a deep umami character and the gentle sweetness creates the glossy, sticky finish. The result is a deeply satisfying pork dish with plenty of savoury depth, sweetness and spice without excessive heat.
