| A restaurant classic, hand prepared in our Muirhead shop using 100% Scotch Beef and a rich, creamy mushroom sauce. For our Steak Diane we use salmon cut, a lean, flavoursome cut of Scotch Beef that works particularly well in this dish. Its fine grain and naturally beefy flavour allow it to remain the star of the dish while absorbing the flavours of the sauce as it cooks. The beef is combined with a luxurious sauce made with mushrooms and porcini, cream, a touch of cognac and black pepper. The mushrooms provide a deep savoury character, while the cream gives the sauce its smooth, indulgent finish and the cognac adds another layer of richness. The result is a wonderfully comforting dish with tender Scotch Beef, earthy mushroom flavours and a rich, creamy sauce.
